PEACH BREAD

                      

Here’s a delicious breakfast/snack bread to start off the week.  You can use fresh peaches or frozen slices (without sugar added) that you thaw out.  My Mother loves peaches and she has always wanted me to share her passion for them!  Well Mother is ALWAYS right (I hope my children read this)!  This yummy bread may just be the catalyst for changing my “peachless” life!  After all—what respectable Southern woman does not enjoy peaches?  I guess you’re never too old to “grow up” !!  :)


Ingredients:
1 stick of butter, softened
One and ½ cups sugar
3 extra large eggs
2 t. vanilla
3 cups flour
2 t. baking powder
½ t. baking soda
1 t. salt
2 (scant) cups diced fresh peaches (or thawed and drained frozen)
½ (scant) cup buttermilk
3 T. frozen orange juice concentrate, thawed

Instructions:
*Cream butter and sugar.
*Add eggs and vanilla, mix well.
*In a separate mixing bowl  combine flour, baking powder, baking soda and salt.
*Toss peaches into flour mixture to coat.
*Add flour mixture to egg and butter mixture alternately with buttermilk, stirring to combine after each addition (do not overmix).
*Add orange juice concentrate.
*Pour into lined muffin tins or loaf pan.
*Bake at 350 degrees until bread is cooked and golden.  Cooking times will vary based on pan used.

EGG-IN-A-HOLE

                  

Here is a fun breakfast that the kids can help with.  I think it would even be good for supper!  Enjoy it with a side of grits or breakfast potatoes and tomatoes.
So Yummy!

Ingredients: For one person
1 piece of bread (any type)
1 egg
Kosher salt
Black pepper
Olive oil or margarine

Instructions:
*Evenly spread desired amount of olive oil or margarine over one side of bread.
*Press a small round cookie cutter (approximately 2 inches in diameter) into the center of the slice of bread.  If you don’t have a small round cookie cutter you can just cut or tear a 2 inch round into the bread.
*Melt 1 teaspoon of margarine or olive oil in a non-stick skillet and place the bread (oiled side up) in and cook for 1 to 2 minutes.  Place the cut out circle of bread into the pan to cook as well
*Turn the bread and the cut-out over and crack the egg into the hole in the bread.
*Sprinkle salt and pepper onto the egg.
*Cook the egg to desired doneness.
