LETTUCE WRAPS

Lettuce wraps are so versatile!  The possibilities for ingredient combinations are limitless!  So I suggest that you have a lettuce wrap party with your family.    The hardest part of this is laying out the ingredients—and of course deciding which lettuces, meats,  vegetables  and toppings to offer.  Each person assembles their own wrap and shows off their creativity.  You will get credit for a delicious and fun meal.   Send me a note to let me know of the lettuce wrap ingredients you come up with.   Enjoy!

Ingredients: These are only suggestions.  Think of things your family enjoys and include those.

Lettuce: Iceberg (be careful to not tear the large pieces as you wash them) Remove the core, wash and separate into large individual pieces to serve as the wraps.
Romaine –Crunchier but not as easy to wrap.
Bibb, Boston—Softer

Meats:  All meats should be cooked and cooled enough to not wilt the lettuce.
Vegetarian:  black beans, chickpeas, kidney beans, lentils, etc…
                Chicken (pictured above)
                Ground Beef
                Fish

Vegetables: I won’t be able to list all the vegetable possibilities.  Here is what I used most recently (pictured).
Sauteed onion, red bell pepper and celery
           Shredded carrot
           Edamame
           Spinach

Sauces:  Depends on the style you are trying to accomplish.
           Thai sauce
Teriyaki (this is what I  used)
            Balsamic vinegar
            Rice vinegar

Toppings:
      Sesame seeds
      Sunflower seeds
      Pumpkin seeds
      Almond slices
       Thin pieces of fried onion

Instructions:
*Place a piece of lettuce on your plate.
*Choose your toppings and place them on top of the lettuce –be careful to not overfill or everything will fall out.
*Fold it like a taco or a burrito.
