CARROT-RAISIN SALAD


This is a quick and easy salad that is refreshing and nutritious, especially if you use low fat mayonnaise.  It is a great accompaniment for your Easter dinner.  It is also a wonderful recipe for the “budding chefs” in your family to try.  Enjoy!

Ingredients:
4 cups finely shredded carrots
 2 cups fresh, finely chopped pineapple (or 1 large can (20 oz.) of crushed pineapple
1 cup raisins
¾ cup of mayonnaise (I use the olive oil variety)
2 t. lemon juice

Instructions:
*Mix all ingredients together and chill for at least 30 minutes before serving.
