BANFF FUDGE

                            

I call this Banff fudge because it reminds me of the type of fudge that you can get in the town of Banff here in Alberta at one of the main street candy stores.  It is creamy and very stout as my Grandmother would say.  Which really just means that it holds its shape and is a bit heavy (she used to describe certain people as stout as well)  J  Anyway I hope you enjoy this weekend treat!

Ingredients:
4 T. butter
2/3 cup evaporated milk
1 and ½ cup sugar
½ t. salt
7 ounces of marshmallow cream
3 cups semi-sweet chocolate chips (or milk chocolate if you prefer)
2 t. vanilla

Instructions:
*Combine butter, milk, sugar, salt and marshmallow cream in a heavy saucepan.
*Bring to a boil and stir for about 5 minutes at a rolling boil.
*Turn off heat and add chocolate chips and vanilla.
*Pour into a square pyrex baking dish that has been lined with aluminum foil.
*Refrigerate for 1 or 2 hours until firm and then cut into squares.
