FRIDAY TRISCUIT CHICKEN STRIPS

                     

I am obsessed with Triscuit crackers, especially the original flavor “thin crisps”.  They are a great little snack.  So as I was trying to think of a new  recipe, I thought that my little Triscuits would make a great coating for baked chicken.  I was right!  And since there are many flavors of Triscuit  crackers, you have a variety of possibilities (Rosemary and Olive Oil flavor and Balsamic and Basil flavor to name two).  Let me know what you think!

Ingredients:  double the recipe if using more chicken
3 chicken breasts, cut into strips
1 cup of pulverized Triscuit crackers (whatever flavor you wish).                                         I put them in a large Ziploc bag and roll over the outside of the bag with a                            heavy rolling pin.
2 T. flour
1 t. black pepper
2 eggs, beaten well with a splash of water

Instructions:
*Place pulverized crackers, flour and pepper into a medium sized bowl.  Mix well.
*Place beaten eggs and water into a small bowl.
*Preheat the oven to 400 degrees.
*Line a baking sheet with parchment paper and spray the parchment with PAM.
*Dip each chicken strip into the egg mixture and then the cracker mixture.
Place each strip onto the parchment lined baking sheet.
*Bake for 35 minutes or until chicken is cooked through.
*Serve with honey mustard.
