SHRIMP TACOS

                      

Shrimp tacos are an easy, last minute supper to make any night of the week.  What’s so great about them is that you can leave them simple or you can add your favorite sauce, salsa or herbs to jazz them up.  This is also a wonderful way for kids to try their hand at  preparing supper because it requires planning and it gives them a voice in choosing their favorite toppings and additions.  Have fun with this one!

Ingredients:
Shrimp (enough for your family), peeled with the tails off
Olive oil
2 T. butter
Kosher salt
Fresh lime (or lemon) juice
Lettuce, shredded
Tomatoes, chopped
Avocado, chopped
Sour cream
Chopped dill
Tex Mex  or Sharp Cheese (shredded)
Crunchy Wonton Strips (salad topping)
2 cups green Cabbage, shredded
Yellow bell pepper, cut into strips
1 cup chopped broccoli florets
Flour tortilla shells (or hard shells if you prefer)
Salsa

Instructions:
*Saute the shrimp in a splash of olive oil and 1 T. butter
*Add salt to taste and lime juice to cooked shrimp
*Saute the cabbage, bell pepper and broccoli florets in a splash of olive oil and 1 T. butter until softened.  Season with salt and pepper to taste.
*Mix dill with sour cream.
*Lay out the tortilla shells, shrimp, cabbage mixture, lettuce, tomatoes, avocado, sour cream, salsa, wonton strips  and cheese for easy assembly.
