This is a fun Friday recipe for you!  These apple fritters are yummy but If  you want to I  think you could substitute fresh peaches or maybe even bananas.  Also, feel free to add spices that you enjoy such as cinnamon, etc.  These fritters make a great snack or breakfast treat!

Ingredients:

1 t. salt
2 eggs, beaten
¾ cup milk
1 t. vanilla
3 cups , finely chopped apples
Oil for frying
Confectioner’s sugar, for sprinkling

Instructions:
*Combine flour, baking powder and salt in a mixing bowl.
*Add eggs, milk and vanilla.
*Fold in apples.
*Heat oil and drop batter by Tablespoonfuls  into the oil.  The batter will puff up.
*Fry until golden (turn fritters over once to brown on other side).  The frying will only take 2-3 minutes.
*Remove fritters from oil onto paper towel lined baking sheet and roll each one in confectioner’s sugar while they are still hot.
