POTATO SALAD

                  

Today’s recipe is a guest post from my daughter, Joanna!  She made a beautiful potato salad and I think you should try it with your family.  Potato salad is worth the little bit of extra time it takes to make it because it is such a wonderful side dish.  Another really great thing about potato salad is that you will most likely  have all the ingredients you need—without having to make a dash to the store.  So you can whip up a big bowl of this delightful stuff whenever the mood strikes.  Thanks Joanna for your great recipe!

Ingredients:
1 and ½ cups mayonnaise
½ t. salt
¼ t. pepper
¼ t. paprika
2 T. Dijon mustard
1/8 t. sugar
6-7 yellow or white potatoes, washed and trimmed but with skins on
¼ c. onion, finely diced
2 stalks celery, diced
6 large boiled eggs, peeled and chopped
¼ c. chopped  dill  pickles

Instructions:
*Boil potatoes (with skins on) for 20-25 minutes or until just tender.
Allow to cool.
*Meanwhile, mix mayonnaise, salt, pepper, paprika, Dijon mustard and sugar.
*Peel and dice cooled potatoes.
*Carefully mix mayonnaise mixture with potatoes, onion, celery, eggs and pickles.
*Refrigerate for 6 to 12 hours for best flavor.
