CORNED BEEF

                                     

Ok, it’s been 2 weeks---the brining of the corned beef is finished.  Today is the glorious day that we get to cook and eat delicious corned beef sandwiches.  If you don’t know what in the world I am talking about----please read my post from January 23rd.  You will learn how to make the brine for homemade corned beef.  If you are one of the brave souls who is trying this ----today is the day you will be rewarded for your patience.   Enjoy!

Ingredients:
1 whole corned beef

Instructions:
*Remove corned beef from the brine.  Discard brine.
*Rinse corned beef under cold water.
*Place corned beef into a  crock pot with enough water to cover the meat.  You may use a large pot on the stove if you prefer.  If you cook the beef on the stove you will need to watch it to make sure there is always enough water as it simmers.
*Simmer for at least 4 hours or until meat is very tender.  It usually takes longer than 4 hours to get very tender so I just turn the crock pot on for another 2 to 4 hours.
*When tender, slice the corned beef very thinly against the grain.
*Serve with potatoes and cabbage or serve on rye bread or your favorite buns.
