COCONUT MACAROONS

                     

These little sweets are delightful and beautiful!  Please try these and let me know what you think!

Ingredients:
2 egg whites
½ t. vanilla
dash salt
2/3 cups sugar
1 and 1/3 cups flaked, sweetened coconut

Instructions:
*Spray a cookie sheet with PAM.
* Beat egg whites, vanilla and salt until soft peaks form.  Gradually add sugar, beating until stiff peaks form.
* Fold in coconut. 
*Drop from a teaspoon 1 ½ inches apart onto a greased cookie sheet.
* Bake in a 325 degree oven about 20 minutes.  Cool.
Makes 20-24
