ARTICHOKE-SPINACH DIP


What are you planning to serve at your Super Bowl party?  Even if you are not having guests you’ll want to treat your family to this artichoke-spinach dip.  It is so tasty, and let’s face it---it’s expected!  Serve it with an assortment of crackers, baked chips or even cut up fresh vegetables.

Ingredients:
*1 can or jar of artichoke hearts
*1 small package of frozen spinach, drained (or fresh if you prefer).
*1/2 cup mayonnaise (the olive oil variety)
*1/2 cup sour cream
*1 cup freshly grated parmesan cheese (not the powdered stuff)
*½ t. black pepper

Optional additions:
¼ cup chopped onion
1 t. chopped garlic
½ cup of cheddar cheese (or cheese of your choice)
Black olives
Pimentos

Instructions:
*In a mixing bowl, combine all ingredients (and any of the optional ingredients you are using).
*Spoon ingredients into a small pyrex baking dish that has been sprayed with PAM.
*Bake dip at 350 degrees for 25 minutes until hot and bubbly.
