CHOCOLATE DATE-NUT BREAD


If you’ve never tasted date nut bread, this is the one to begin with.  It is sooo good!  It is delicious served with a great cup of coffee or even apple cider.

Ingredients:
1 cup water
2 (1 ounce) squares, unsweetened baking chocolate
1 cup chopped dates
½ cup chopped pecans or walnuts
 1 t. baking soda
¼ cup butter
1 cup sugar
1 egg
1 t. vanilla
2 cups flour, sifted
½ t. salt

Instructions:
*Boil water over high heat
*Add chocolate, reduce heat to low and cook until chocolate is melted.
*Stir in dates, pecans and baking soda; mix well and set aside.
*In a mixing bowl, beat together butter and sugar until light and fluffy.
*Beat in eggs and vanilla.
*Combine flour and salt in a separate bowl.
*Add flour mixture alternately with the chocolate mixture to the creamed butter and sugar—beating well after each addition.
*Spoon batter into greased loaf pan or greased Bundt cake pan.
*Bake at 350 degrees for 50 minutes or until tester, inserted in center comes out clean.
*Cook for 10 minutes before removing from pan (you may loosen sides with a knife).
