CARAMEL POPCORN

                  

This is yummy!  Set aside plenty of time to devote to making this wonderful holiday treat.  Also make sure to be careful (get the little ones out of the way) because the syrup that you pour over the popcorn is dangerously hot.    This caramel popcorn is addictive!

Ingredients:
22-24 cups of popcorn (popped)
½ cup butter (1 stick)
1 cup dark corn syrup
2 cups brown sugar
2 t. vanilla

Instructions:
*Divide popcorn into 2 large bowls.
*Mix butter, corn syrup and brown sugar into a heavy saucepan.
*Boil for 5 minutes, turn off heat and stir in vanilla.
*Pour half of syrup over one bowl and stir quickly to coat popped corn (with a large metal spoon that has been sprayed with PAM). 
*Pour remaining half of syrup over second bowl and stir quickly to coat popped corn.  Reheat this second half of syrup if it becomes too cool to pour.
*Pour coated popcorn into two 9 x 11 baking pans (that have been sprayed with PAM) and place on different oven racks.
*Bake for 1 hour at 250 degrees, rotating pans every 15 minutes.
*Store in an airtight container.
