LEMON RICE

                

Here’s a twist on rice---a lemon twist!  I use many different types of rice in my kitchen but for this dish, regular white rice is great.  I have found that lemon rice is a wonderful side dish to brighten up an entrée of chicken or pork.  I hope you will try it!

Ingredients:
2 cups white rice
Zest and juice of one or two lemons
Kosher salt and black pepper to taste
1 T. butter

Instructions:
*Cook rice according to directions (this is usually equal amounts of rice and water which are brought to boil and then covered and turned off for 5 minutes).
*Add zest and juice from one or two lemons.  Remember to zest the lemon before juicing it.
*Add seasonings to taste and butter if you wish.
