LEMON MUFFINS

                    

I bought a “mega-bag” of lemons from Costco this weekend----they are beautiful!   So, I thought I would make some muffins that were simply-lemon flavored.  I kept them very basic in this recipe, but you could definitely add poppy seeds or bananas if you want to make them more complex.  I think you will enjoy them.

Ingredients:  for muffins
1 stick butter, softened
1 cup sugar
2 extra large eggs
1 t. vanilla
¼ cup freshly squeezed lemon juice
2 T. lemon zest
2 and ½ cup flour
1 and ½ t. baking powder
½ t. baking soda
½ t. salt
¾ cup buttermilk

For lemon syrup:
¼ cup freshly squeezed lemon juice
1/3 cup sugar

Instructions:
*Cream butter and sugar
*Add eggs, vanilla, lemon juice and lemon zest
*Add flour, baking powder, baking soda and salt.  Stir well
*Add buttermilk.
*Pour into lined muffin tins.
*Bake at 350 degrees until muffins are done.

For lemon syrup:
*Combine lemon juice and sugar in a saucepan.  Bring to a boil, stirring constantly until sugar dissolves and mixture thickens slightly.
*Spoon a bit over the top of each warm muffin.  Allow the syrup to soak in and add more if you wish.
