FRIED OYSTERS


I love fried oysters!  I usually serve them with mashed potatoes,  a beautiful seasonal green vegetable and maybe freshly cut pineapple chunks.   Just like with all my other frying adventures, I have tried to make them many different ways.  However I have discovered  that the simple way is the best way.  Use any leftover fried oysters to top a wonderful salad of mixed greens, tomatoes and red bell pepper---with chunky bleu cheese dressing on top.

Ingredients:
Fresh raw oysters, already shelled
Flour
Kosher salt
Black pepper

Instructions:
*Drain oysters.
*Heat oil of your choice (I usually use canola or vegetable) in a black cast iron dutch oven or a black cast iron deep skillet.
*In a mixing bowl combine flour and desired amount of salt and pepper.
*Coat each oyster in flour mixture and carefully place into hot oil.
*Turn over once---when one side become golden.
*Remove each oyster, when the other side becomes golden brown and place on paper towel lined baking sheet.
*Lightly sprinkle cooked oysters with more salt if desired.

Note:
*Remember whenever you are going to be frying, to keep a lid the exact size of your frying pan handy to cover the pan if the oil becomes too hot or if there is a fire.  Make sure you turn off the heat and then cover the pan.  Also keep baking soda nearby.
