BREAKFAST BURRITO

                      

Today’s recipe is special because it is from my daughter Rebecca.  She is an inventive cook so I hope she will share other recipes with us very soon.  What I appreciate about Rebecca’s cooking is that she’s not afraid of experimenting with ingredients and with trying to create new dishes.  This will serve her well when she has her own family to prepare food for.   Her  post for us today is a breakfast burrito  that  is not just for breakfast---it also makes a delicious lunch or supper! 

Ingredients:
2 t. olive oil
¼ onion, chopped
¼ yellow bell pepper, chopped
2 eggs
Pinch of salt
¼ cup spinach, washed
1 strip bacon, cooked and chopped
2 T. sharp cheese
Whole wheat flour tortilla
Avocado and tomato, if desired

Instructions:
*Saute onion and bell pepper in olive oil.
* Stir spinach into the vegetables.
*Drop eggs and salt into the vegetables and scramble them.
*Add cooked bacon.
*Place tortilla shell on a plate
*Place cheese on the tortilla shell and put plate in the microwave for 20 seconds to melt the cheese.
*Place egg/vegetable mixture on top of tortilla.
*Add avocado, tomato and additional cheese if desired..
*Roll and eat immediately!
