FRIDAY HUSH PUPPIES

                     

Hushpuppies are a Southern tradition when served with fish or even barbeque (which is made of pork and served on a bun—for my Canadian friends).  This is another one of those recipes that I have worked on for years.  I hope you enjoy the result of my trial and error.  Yes, these yummy things will hush the puppies while you are cooking---but it will hush up your family as well.   Your family will be sneaking these off the counter before they even make it to the supper table.  Believe it or not, they are even great left over.

Ingredients:
2 cups cornmeal
½ cup flour
2 T. sugar
2 t. baking powder
1 t. salt
½ t. baking soda
1 egg
¾ cup milk
1 small onion, finely chopped
Canola or vegetable oil

Instructions:
*Place all ingredients in a mixing bowl.
*Stir by hand just until moistened—do not overmix.
*Drop by teaspoonfuls into hot oil.
*Fry until golden brown-turning often.
*Remove from oil onto paper towel lined baking sheet.
*Sprinkle with kosher salt if desired.
*Serve immediately or keep in a warm oven until ready to serve.

  1. OH MY GOSH, oooh you have a winner with these!! We Southerners are ALL ABOUT our bbq (which northerners need to know is a NOUN and not a VERB), and good hush puppies are the perfect complement (along with some good slaw, baked beans and homemade mac & cheese, with banana pudding for dessert OF COURSE).

    I am going to make these!!!
