FOIL POUCH SUPPER

                             

When you need an easy supper for one or two people, remember the convenience of cooking in aluminum foil pouches.  When I was young we called these “hobo dinners”.  You can use most any meat and vegetables you choose---just make sure to make everything in the pouch roughly the same size so that the cooking time will work for all your ingredients.  If you use fish, of course the cooking time will be significantly shortened.  Following are the basic instructions using ground beef and vegetables. 

Ingredients:
Ground beef (or ground turkey) patties—1 per person
Potatoes, peeled and sliced in wide strips or slices
Onion, peeled and sliced or quartered
Salt and pepper to taste
**Other vegetables of your choice may be substituted or added

Instructions:  Per Person
*Tear 2 sheets of foil to make an 8 to 12 inch square (2 sheets to double the pouch and allow for drips).  You may use one sheet of heavy duty foil if you wish.
*Spray the surface of the foil square with PAM.
*Place the hamburger pattie in the center of the foil square and season the meat with salt and pepper
*Lay the onion and potato (plus other vegetables if you are using) on top of the meat.
*Bring the edges of the foil up above the meat and vegetables.  Crimp and roll down, allowing a bit of space (at least a half inch) for steam and juices.
*Place the foil pouch on a baking sheet with sides.
*Cook  at 375 degrees for 45 minutes to 1 hour or until meat and vegetables are done.
