FRIED RICE

              

This recipe for fried rice is a trusted  “go to” when I don’t have time to cook or I want to reinvent leftovers.   The amounts are “guestimates” but I will try to pin it down for you!  Just make sure you taste it before you serve to see if you want to add more soy sauce---but be careful adding salt, since soy sauce already adds salt.
This fried rice is delicious served with freshly cut pineapple and a salad.


Ingredients:
4 cups Minute Rice
 1-2 cups leftover meat, finely chopped (Pork or Chicken)
1-2 cups frozen English peas, edamame, chopped broccoli, shreds of carrots ( or any other vegetables you choose.
4 eggs, scrambled
Black pepper, kosher salt to taste
Soy sauce
Olive oil

Instructions:
*Make 4 cups of Minute rice.----  Bring 4 cups of water and ½ teaspoon salt to a boil in a large saucepan.  Stir in 4 cups of Minute rice.  Cover and turn off heat.  Let stand for 5 minutes or until water is absorbed.
*Scramble 4 eggs with a splash of milk, salt and black pepper.
*Heat 4 tablespoons of olive oil in a large skillet (on medium high heat).
*Place rice in skillet with the olive oil.
*Pour desired amount of soy sauce on top of rice and stir thoroughly to distribute.
I usually start out with about 4 Tablespoons and then add more if needed.
*Add meat and vegetables (if using) to rice.  Stir thoroughly and often.
*Add scrambled eggs and stir to distribute.
*Taste fried rice and add pepper, soy sauce and salt if desired.

  1. Fried rice is a family fave, and one that will even keep in the crock pot! Perfect to whip up in the early evening before you start chauffeuring kids all over town. Put it in your crock pot, set to "warm" and come home to a hot, delicious meal!
