CHICKEN DIVAN


*This is a very special family recipe that we always enjoy.  When I was a young girl, our neighbor’s house always smelled like she had just baked this casserole.  It smelled delicious but I just couldn’t figure out if she baked it every day or what??   Anyway I hope your Divan is Divine!

Ingredients:
1 small onion, quartered                                 
2 stalks celery, cut in thirds                            
4-6 chicken breasts                       
2 cups of frozen chopped broccoli  (or spears)
2 cans cream of chicken soup       
1 cup mayonnaise (I use olive oil mayonnaise)
3 t. fresh lemon juice
¾ t. curry powder
3  c. grated sharp cheese
Ritz crackers,crushed




*Boil chicken with onion and celery until tender.
*Cook broccoli and drain. Don’t overcook.  Place broccoli in 9x11 inch baking dish that has been sprayed with PAM.
*Cut chicken in small pieces and place over broccoli.
* Mix soup, mayonnaise, lemon juice and curry powder and pour over chicken.
 *Sprinkle grated cheese over soup mixture.
* Sprinkle Ritz crackers over top of cheese. I usually put the crackers in a large Ziploc bag, close it and then roll a rolling pin back and forth over the surface of the bag to crush the crackers.
* Cook at 350 degrees for 45 minutes.
