FRIDAY SMASHED POTATOES

                                            
 
Today’s recipe is a fantastic side dish that everyone in the family will love!  Find the cutest, most blemish- free new red potatoes you can because you’ll be leaving the skins on.  These are twice-cooked, so allow plenty of time but they are so worth it. Enjoy!

Ingredients:
4-6 small new red potatoes
Extra virgin olive oil
Kosher salt
Black pepper
Butter (if using)
½ cup Sour cream
1 T. Fresh dill

Instructions:
*Wash the potatoes and remove any major dirt or bruises. Leave the skin on and do not slice.
*Place the potatoes (whole) in a medium saucepan and slightly cover with salted water.
*Bring potatoes to a boil and then reduce to a simmer until potatoes are tender. Pierce one with a fork to check for doneness.
*Remove potatoes from the water and allow to cool.  You may even place them on a large plate, cover and put in the refrigerator to get them very cool.
*When potatoes are cold, place each one on a flat surface and smash them slightly with the palm of your hand (be gentle).
*Place the smashed potatoes in a pyrex baking dish that has been sprayed with Pam.
*Drizzle a bit of olive oil onto the top surface of each potato.
*Sprinkle each potato with salt and pepper to taste.
*Place a thin pat of butter on top of each potato if desired.
*Bake the potatoes at 425 degrees until they begin to be a bit crispy but not too brown.
*While potatoes are getting crispy, mix sour cream and fresh dill together in a small bowl.
*Remove potatoes from oven and serve each with a small dollop of the sour cream mixture.
