GREEN TOMATO CASSEROLE

Here is my Mother’s recipe for green tomato casserole.  It is one of her favorites and I think it will become one of yours as well!  This is a great Summer dish to make using home-grown tomatoes. Make two and take one to your neighbor----that’s how Mother was introduced to this recipe.  Enjoy!

Ingredients:
5 or 6 (or more) green tomatoes
Black pepper
Dash of salt
¼ stick butter or margarine
1 cup grated sharp cheese (more if you wish)
Crushed saltine crackers (enough to make a thin layer over the top of the pie)
¼ stick butter or margarine-optional- (for top of pie)

Instructions:
*Slice tomatoes and place in a deep dish round pyrex baking dish (or a square).
Make 2 layers.
*Add pepper and salt to taste
*Dot surface with ¼ stick of butter or margarine.
*Sprinkle grated cheese over top surface of casserole.
*Spread crushed crackers over cheese.
*Dot with ¼ stick butter or margarine, if using.
*Bake 40 to 45 minutes at 350 degrees.
