FRIED CAULIFLOWER

Fried cauliflower!  I remember having this when we went out to eat at steakhouses when I was a child!  Yummy(and really bad for  you)!  Try this recipe for a summertime treat.

Ingredients:
1 head of cauliflower, washed and sectioned into tiny florets
3 cups buttermilk
4 eggs
1 t. salt
2 t. black pepper
2 T. self-rising flour
3 cups self-rising flour (for dredging)
Oil (of your choice) for frying

Instructions:
*Mix buttermilk, eggs, salt, pepper and 2 T. flour in a mixing bowl.
*Place the 3 cups of flour in a separate mixing bowl.
*Drop the cauliflower florets into the buttermilk mixture for at least 10 minutes before frying (can be longer).
*Heat oil in a deep pan safe for frying (I use cast iron).
*Remove each piece of cauliflower from the batter and dredge in the flour.
*Carefully lower each piece of cauliflower in the hot oil.  Do not overfill pan.
*Remove fried cauliflower pieces onto a paper towel lined baking sheet to drain excess oil.  Salt lightly.

NOTE:
*When frying, never leave the pan unattended and watch to make sure the temperature is not too hot.
*If a small fire occurs, turn off the heat source, cover with a properly sized lid and extinguish with baking soda.
