CHICKEN WITH SWEET RED CHILI SAUCE

Today I have a ridiculously easy supper idea to start off the week.  It is a bit obvious but hopefully it will remind you to seek out ready- made sauces  from your favorite grocery or specialty store.  Then use them with whatever meat you have on hand (chicken, pork, beef) to create a dish that your family will think took you forever to prepare.  Enjoy!

Ingredients:  I used boneless, skinless chicken thighs but you should use whatever chicken pieces you enjoy most.  You can even use a variety of chicken pieces---just make sure they are roughly the same size and weight so they can cook for the same amount of time.


Chicken thighs (boneless, skinless)
Sweet Red Chili sauce (I used Thai Kitchen brand)

Instructions:
*Spray pyrex baking dish with PAM (size depends on amount of chicken you are making).
*Place chicken pieces into dish
*Pour sauce (generously) over chicken and turn each piece to coat.
*Bake at 375 degrees until chicken is done (juices run clear) and tender.
*Serve over rice with broccolini or zucchini and salad.
