SHRIMP AND CHEESE GRITS

Here is a Southern classic that I can’t believe I haven’t posted yet.  This makes a special lunch or supper when you have access to delicious shrimp.  I also enjoy using wonderful scallops as a substitute for the shrimp.  Serve with “end of the summer” watermelon or freshly sliced peaches.  Enjoy!

Ingredients:
Cooked grits (simply cook according to the directions on the box to make your desired amount of servings.
Sharp cheese (stir desired amount into hot, cooked grits)
1 T. butter
2 T. olive oil
½ large sweet onion
½ large red bell pepper
26-30 shrimp (peeled and deveined)
1T. butter
¼ cup water
2 t. paprika
1 to 2 t. hot red pepper flakes
Salt and black pepper to taste
1 T. fresh parsley

Instructions:
*Saute onion and bell pepper in butter and oil.
*Add shrimp and additional butter and water
*Saute  until shrimp are cooked through (do not overcook—this takes approximately 5 minutes).
*Add paprika, pepper flakes, salt, pepper and parsley
*Serve shrimp mixture over cooked cheese grits.
