QUICK SUPPER PIZZA

This is pizza week!!   I’ll be posting my favorite pizza recipes---some are easy and some are more labor intensive (like yesterday’s post)!  Today I’m sharing a quick supper pizza that is not as fast as using ready-made crust but  it is definitely a way to get family members involved as you prepare a fast dough and then chop up the toppings. Have fun looking through your fridge to find great toppings for your pizza or keep it simple with just 3 toppings like tomatoes, basil and cheese. And you get to decide if you want the cheese layered first—then the toppings OR if you want the toppings layered first and then the cheese… It’s entirely up to you, so have fun!

Ingredients: for the crust
3 cups flour
1 envelope yeast (I use “quick-rise”)
1 t. salt
1 cup very warm water
3 T. olive oil

Instructions: for the crust
*Using an electric mixer with a paddle attachment, combine all the ingredients.  Beat on high until dough ball forms. Add more oil if too dry.
*Spread a large sheet of parchment paper on the counter and dust with flour.
*Knead the dough for a few minutes until is stiff yet elastic.  Work more flour in if it is too sticky.  Divide dough in half or fourths if you wish and let rest for 10  to 30 minutes.
*Preheat oven to 400 degrees and spray 2 cookie sheets with PAM.
*Roll out each dough half into a thin rectangle and place on cookie sheets.  Brush or spray olive oil over surface of crust and prick holes across surface with a fork.
*Bake dough for 10 minutes or until set and beginning to brown.
*Remove from oven and top with desired cheeses, vegetables, meat and herbs.
*Following are the toppings I used.

My Toppings: in order
Miniature heirloom tomatoes
Yellow grape tomatoes
Red cherry tomatoes
Shredded Vidalia onions
Fresh basil
Fresh Mozzarella
Thinly sliced Provolone
Low Fat Italian Cheese blend

*Return to oven and bake pizzas at 400 degrees until bubbly.
*Cut into large square pieces.
