CHOCOLATE ZUCCHINI BREAD-MUFFINS

Today I made some  yummy zucchini muffins---ok they are actually Chocolate zucchini muffins.  I guess that negates the health benefits of the zucchini---but I think you will really enjoy them!  You could also pour the batter into 2 loaf pans or a Bundt cake pan if  you prefer slices to muffins.  Enjoy!

Ingredients:
2 cups sugar
1 cup oil (I used canola)
3 eggs
2 t. vanilla
2 and ½ cups flour
½ cup cocoa
1 t. salt
1 t. baking soda
½ t. baking powder
2 cups grated (peeled) zucchini

Instructions:
*Whisk together sugar, oil, eggs and vanilla. 
*Stir in flour, cocoa, salt, soda, baking powder.
*Add zucchini
*Spoon into 20 paper lined muffin tins.
*Bake at 350 degrees for 40 minutes or until done.
