Biscuits---Biscuits----and lots of Butter :)

 Yes, I know these 2 recipes use a lot of butter----but every now and then it's fun to treat your family to  these delicious quick breads.   I especially want  you to try the "quick butter biscuits".   They are amazing!


FROZEN BUTTER BISCUITS


4 cups flour
4 Tablespoons of baking powder
2 Tablespoons of Kosher salt
2 sticks of frozen butter
1 ½ cups of milk


Preheat oven to 400 degrees.
Whisk flour, baking powder and salt together.
Grate frozen butter into flour mixture.  Mix together lightly with fingers.
Pour milk into flour/butter mixture.  Mix gently.  Add a little more milk if necessary.
Form into a loose round shape and turn out on a floured surface.
Roll out dough (thickly) and cut into desired shapes.
Position on a baking sheet.
Sprinkle each biscuit with a bit of coarse salt and black pepper.
Bake at 400 degrees until lightly browned.


QUICK BUTTER BISCUITS

2 cups self-rising flour
2 sticks melted butter
1 cup sour cream

Gently stir all ingredients together.  Place a small spoonful into mini-muffin tins.  Bake at 375 degrees until slightly browned on top.
