EASY BAKED FISH


This week I will be posting my favorite seafood recipes for you.  There is nothing better than fresh, local fish and seafood----and perhaps nothing worse than seafood that is not fresh (and has come from a source with questionable handling practices).  Do a little research when purchasing fresh or frozen seafood to find out how far your fish has travelled and if it is wild, farm raised or previously frozen--it’s a bit like a first date--:)


Ingredients:
 Sole, Talapia or Salmon fillets:  fresh or frozen (when buying frozen fillets I find those  that are individually wrapped and sold in large resealable bags---then I always have fish ready to cook).
Fresh lemon slices
Extra virgin olive oil
Salt and pepper to taste  (I also use fresh dill sometimes)

Instructions:
*Preheat oven to 400 degrees.
*Spray a large rectangular Pyrex baking dish with PAM or line a large baking sheet with aluminum foil and then spray foil with PAM.
*Place fillets –skin down—onto prepared pan. 
*Sprinkle with olive oil and seasonings to taste.
*Place a fresh lemon slice or two onto each fillet.
*Bake for approximately 15-20 minutes (depending on the thickness of each fillet) or until fillets reach desired doneness (should be flakey in the middle).
*Serve with your favorite rice or potatoes and green vegetables.  Also delicious with quinoa or couscous.
