BELGIAN WAFFLES

Today’s recipe is very special because it comes from my son-in-law.  He made these yummy waffles for my birthday supper. He made 3 different kinds in order to please everyone.  Some were plain, some had fresh blueberries and some had chocolate chips!   There are easier Belgian Waffle recipes out there but this one is so delicious and worth the extra effort.  Have a family member join you in the kitchen as you prepare these yummy waffles and they will learn some valuable cooking methods.  I posted my recipe for homemade syrup on November 25th, 2011—check it out!                      Thanks for the delicious recipe Shawn!

Ingredients:
1 envelope of dry yeast
¼ cup warm milk (not hot)
3 egg yolks
2 and ¾ cups warm milk
¾ cup melted butter (lukewarm)
½ cup sugar
1 t. salt
2 t. vanilla
4 cups flour
3 egg whites
**Optional:  blueberries, chocolate chips, strawberries, whipped cream, syrup, etc.

Instructions:
*Dissolve yeast in ¼ cup warm water.  Let stand 10 minutes.
*In a mixing bowl, whisk together the egg yolks, ¼ cup (of the 2 and ¾ cups) of warm milk and the melted lukewarm butter.
*Add in the yeast mixture.
*Stir in the sugar, salt and vanilla.
*Add the remaining 2 and ½ cups of warm milk alternately with the flour, ending with the flour.
*Using an electric mixer, beat the egg whites until soft peaks form and fold into the batter.
*Cover the bowl with plastic wrap and let rise until doubled in volume (about 1 hour).
*Add any of the optional additions that you are using at this time.  If you are using multiple additions, just divide the batter accordingly.
*Preheat your Belgian Waffle iron according to manufacturer’s instructions, spoon the recommended amount of batter onto the center of the iron and close the lid.
*Remove from iron when golden brown. 
*Serve with fresh fruit, whipped cream and/or syrup.
