FRIDAY DEVILED EGGS


Deviled eggs (or as my kids call them, angeled eggs)  are a staple in the South, especially at pot luck dinners and I guess wherever two or more are gathered.  It is one of the first things little Southern girls are taught to make.  There are as many variations for deviled eggs as there are deviled egg makers---so make sure to add your own favorite ingredients and then to share your ideas with me (and the other blog readers). 

Ingredients:
6 eggs
1 large spoonful (then add more if needed or desired)- Mayonnaise (or Miracle Whip)—I use the olive oil variety
1 small spoonful (then add more if needed or desired)- Yellow mustard
Pinch of salt
½ t. black pepper
½ t. sugar
Sweet pickle juice (enough to loosen mixture without making it runny)
Sweet pickle cubes or relish to taste-optional

Instructions:
*Boil eggs:  Carefully place eggs in a large saucepan—eggs should be in a single layer.  Gently pour water over the eggs, just to cover.  Put the lid on the saucepan.
Turn on high and bring to a vigorous boil.  Turn the heat off (remove from heat source if using electric heat) but do not remove the lid.  Let pan stand for 12 minutes.
*Run cold water over eggs and carefully remove shells (extremely fresh eggs are harder to peel).
*Cut each peeled egg in half, lengthwise.
*Using a very small spoon, scoop out the yolk from each egg half and place in a glass or ceramic mixing bowl.
*Place each egg white half onto the serving plate.  You will have 12 halves.
*When you have collected all the yolks, mash them with a fork or a wire whisk.
*Blend in mayonnaise, mustard, salt, pepper, sugar and sweet pickle juice.  Taste the mixture to determine if you want to add more of any of the ingredients.
*Using a small spoon, fill each egg white half with the egg yolk mixture.
*Refrigerate until ready to serve.

Variations:
-Use 1000 island salad dressing with the egg yolks  or another salad dressing that you like.
-Use small bits of bacon, onion, tomato or other vegetable or meat with the egg yolks.
-Place your egg yolk mixture into a piping bag  and then pipe the filling into the egg white halves.
