CHEESY QUESADILLAS

Today’s recipe is for you Moms with young children.  When my kids were very small they preferred my cheese quesadillas instead of pizza.  It’s really like a toasted cheese sandwich except you use flour tortillas.  You can of course add tomato sauce and even meat and vegetables to make it more pizza- like.  But you can’t beat the basic cheese ones for a quick supper that your children will enjoy.  Serve with raw vegetables and fruit.

Ingredients:
Flour tortillas
Shredded cheese (of your choice)

Instructions:
*Lightly spray a baking sheet with PAM
*Place tortillas on baking sheet
*Top each tortilla with shredded cheese
*Top each with another tortilla or leave open-faced if you wish
*Bake at 400 degrees until cheese is melted and bubbly
*Cut into triangles

**To serve these as appetizers just add red pepper flakes and/or pimentos to the cheese and your favorite herbs (such as basil or oregano).
