NANAIMO BARS

photo.JPG

I made some Nanaimo Bars this weekend.  They are well known here in Canada as they are named after the city of Nanaimo, British Columbia.  I hope you will try these yummy treats for your crew this holiday weekend.  Enjoy!

Ingredients:  I doubled the ingredients and used a 9 X 13 pyrex dish---but following are the amounts and instructions for a 9 inch square dish.
Ingredients: Base
1 cup graham cracker crumbs
½ cup flaked coconut
1/3 cup finely chopped walnuts
¼ cup cocoa powder
¼ cup sugar
1/3 cup melted butter
1 egg
**Stir together all ingredients  and press into prepared pan.  Bake at 350 degrees until firm---10-12 minutes.
Ingredients:  Filling
¼ cup softened butter
2 T. custard powder
2 t. vanilla
2 cups powdered sugar
3 T. milk
**Beat together butter, custard powder and vanilla.  Add powdered sugar alternately with milk until smooth and add more milk if needed.  Spread over cooled base and refrigerate until firm.
Ingredients:  Topping
4 ounces semi-sweet chocolate
1 T. butter
**Melt chocolate and butter.  Spread over filling, refrigerate until set.
