BALSAMIC STRAWBERRIES

                           

I discovered how delicious balsamic vinegar was only 2 years ago, but I have been making up for lost time ever since.  I put it in everything I can.  So when I heard about someone putting it in strawberries, I couldn’t resist trying my hand at a recipe.  I think you will really enjoy the combination of savory and sweet the next time you want to have a strawberry dessert.  It is a great substitute for the regular sweet strawberries that you use in strawberry shortcake (or you can layer them with the sweet ones).  They are also wonderful served with a dollop of homemade vanilla ice cream (posted on March 26th)  or offered alongside yummy, melting Camembert cheese.    Try it---you’ll like it!! 
PS.  Let me know of other ways you enjoy balsamic vinegar.

Ingredients:
1 quart of fresh strawberries, washed, trimmed and cut into small pieces
¼ cup regular or superfine sugar
2 to 3   T.  Balsamic vinegar
1 t. freshly ground black pepper

Instructions:
*Combine all ingredients.
*Cover and place in refrigerator until ready to use.

FRIDAY WARM CORN SALSA

                  

This warm salsa is a great topping for turkey burgers or tacos.  The addition of radishes adds unexpected crunch and color and everyone seems to really enjoy it.  I hope you will try it soon.

Ingredients:
2 T. extra virgin olive oil
2 cups fresh or frozen corn  (if using fresh, just boil the ears and then cut off the kernels).
½ cup chopped sweet onion
½ cup chopped yellow bell pepper
½ cup sliced radishes
¼ cup chopped fresh parsley
Dash of kosher salt
1 t. black pepper
Optional:  red pepper flakes

Instructions:
*Place olive oil in a saute pan.
*Place all ingredients except radishes and parsley in the pan and sauté until vegetables are wilted and are beginning to soften.
*Add radishes and parsley.  Heat through
*Turn off heat and serve.
